When I think of summer, I think of it being way too hot, and honestly, it is my least favorite season of the year. I am just a cold-weather girl. So far, my favorite place to live was MN with the -20 to -40 degree temps in the winter. I drool over those temps and would love the chance to go back, but since I live in Georgia, not only does it get hot, but it is also really humid, and for someone like me, who can step outside and start sweating literally within seconds, I prefer to stay inside as much as I can to avoid taking multiple showers a day. Still, I do enjoy getting out in the sunshine some and all the beautiful blooming trees and flowers to go with it. The place I spend the most time when outside is our backyard, which is beautifully wooded and it feels like you are just a part of nature.
I do have a favorite part of summer and that is all the delicious fruits that you can only get during this time of the year, and the one I can't seem to get enough of is watermelon. I think I love this fruit so much because it is very refreshing and filled with water and that is what my body craves especially in the summer.
Summer treats for me are best when they are light and refreshing. I just can't handle anything thick or heavy, and I tend to prefer cold treats as well to offset the hot temperatures, so anything frozen, such as popsicles are best.
As part of another one of Heather Pace's Dessert Challenges at Sweetly Raw, we are to create a summer raw parfait in accordance to her Raw Party Parfait book and the contest rules. So, for my entry, I chose to make a parfait using watermelon, lime (to offset the sweet watermelon flavor with a little sour), and pineapple (naturally sweet with a little bit of sour to bring the flavors together) flavors, and this is how I came up with my Iced Sweet/Sour Parfait.
For this yummy dessert, I made the lime cream according to Heather's recipe, and layered this with chunks of fresh pineapple, and frozen watermelon ice (which I made by pureeing watermelon, and freezing it for an hour in the freezer, and then breaking up into little clumps-It is just like a snow cone, but of course, so much better).
And that was it!
This dessert was incredibly easy to make and took about 10 minutes to make (other than the wait time on freezing the watermelon). I love how quick it was to make, but even better how yummy it was to eat. It was perfect...sweet and sour, yet cool and very refreshing...the perfect summer treat!
Yum! I love the idea of the cool, sweet watermelon ice with the creamy, sour lime. The colors look so pretty together too. I'll be trying this one for sure :)

Mmmmm, watermelon and lime is one of my favorite combos. I REALLY want to try this!!!! I'm also from Georgia and it has been CRAZY hot lately. Luckily I love the heat!
